Hi, I’m Kate, the dietitian behind LiveWellRD.

I am a Registered Dietitian Nutritionist, Certified LEAP Therapist and Culinary Adventurist.

What does all that mean? In a nutshell, it means I can tell you the best foods for your body and how to cook them.

I believe in food and listening to your body. I don’t believe in fad diets and obsessing about calories. I am crazy in love with nutrition, especially gut nutrition, and always do my best to keep up with the research by talking to colleagues and reading research articles.

I have worked with and around food for most of my adult life- from bars and restaurants to schools and food service. I love food and I believe in its power to heal both the body and soul.

Sometimes, however, food doesn’t heal. Sometimes food can hurt.

That’s why I became a Certified LEAP Therapist, to be better prepared to help people navigate the tricky waters of food sensitivities.The ones that can lead to migraines, IBS, fatigue and everything from a general “blah” feeling to downright sick. Because we all deserve a good meal, one that nourishes us and one that won’t leave us jolting for the bathroom.

As a dietitian, I was taught about the long term and lifetime benefits of a healthy diet- when you eat adequate greens over a lifetime your risk of cancer goes down or getting plenty of fiber over time can lower cholesterol.

But there is another impact of diet, a more immediate one- food sensitivities can impact everything from your GI system to migraines to skin issues and they do so immediately, within a few hours or even a few days. These sensitivities impact your daily life in a very real and very immediate way. I understand that, and I want to help!

I attended Johnson & Wales University in Denver Colorado where I received both an Associate’s Degree in Culinary Arts and my Bachelor’s Degree in Culinary Nutrition. From there I moved out to Kansas City where I did my Dietetic Internship at the University of Kansas Medical Center. I worked as a dietitian for a Food Service company in KC for a few years where I worked with schools, wrote menus for Meals on Wheels programs and tried my best to get people to get their leafy greens and whole grains.

In 2014 my husband and I left our comfy life in KC in favor of a life of adventure and unknowns. We traveled the world for almost 14 months, eating, drinking, cooking and walking our way through Central and South America, Eastern Europe and Southeast Asia. I made sure to take cooking classes every chance I got!
